Beetroot is such a healthy vegetable, but you have to be really creative to get your family to eat it! Here’s a sneaky snack that the kids will love for the colour and taste, and you will adore for the nutrition it provides!
Method:
1. Mix the grated beetroot, boiled potato & spinach in a bowl. Keep aside.
2. In a pan, heat 1 tbsp of oil and add asafetida. Now add the cumin seeds & green chilly, and then add the above mix. Lower the heat and keep stirring with a spatula so that the mix does not stick to the sides. This mix should be cooked until the water in the vegetables dries out.
3. Remove the pan from the heat and add the bread crumbs and the rest of the dry spices. Mix well so that the bread becomes part of this mix . Let this now cool for 10 mins.
4. In a dry plate, spread the semolina. Make small round discs or tikkis from the vegetable & spice mix and then cover each of these discs with the semolina.
5. Heat the rest of the oil on a flat pan or tawa on high flame, and then keep adding the discs onto the tawa all at the same time.
6. Lower the heat and let the discs cook for about 5-7 mins on each side. Serve with green mint chutney or yogurt-garlic dip.
This is a perfect snack with the kids’ milk in the evening, or even as your tea time snack! It can also be an interesting option for the children’s tiffin at school...and needless to mention, a sneaky way to get them to eat beetroot ☺
