Here's a tasty but amazingly healthy chutney which combines the nutrition benefits of walnuts & pumpkin seeds with a touch iron-rich coriander to add a little zing to our food!
80gms of walnuts
2 spoons of pumpkin seeds
3 coriander sprigs
2 spoons curd
salt to taste
Soak the walnuts and pumpkin seeds seperately in water for 30 min. In a blender, put the walnuts, pumpkin seeds, coriander leaves, salt and green chillies and blend till it becomes a paste. The walnut chutney is ready and can also be used as salad dip.
This chutney is an effective way of serving highly nutritious walnuts and pumpkin seeds to fussy eaters: kids or adults!
Note: Store in refrigerator for 2-3 days since it also has curd.
