Here is a simple healthy recipe for pancakes using only whole wheat flour and it is vegan to boot!!
Usually Pancakes are made with Eggs and milk, but these are Vegan – without eggs or milk – and are leavened using Sour dough method.
Sour dough is a bread product made by long fermentation of the dough using naturally occurring yeasts and lactobacilli.
Traditionally a mixture of flour, salt, sugar, and water was allowed to ferment overnight to make sour dough, which was further combined with other ingredients to produce tasty bread.
Ingredients
Whole wheat flour - 1cup
Water 1 1/2 cup
Salt - 1/2 tspn
Sugar- 1 tspoon
Mix all together in a smooth batter and let it sit overnight. It will be slightly bubbly the next morning or afternoon, depending upon the weather.
Heat the pan and grease it with a few drops of oil. Pour a ladle full of batter and spread in a circular motion making it thin.
Cover and cook for 2 min, then turn the pancake when it starts leaving the sides. Cook for a minute and take it off the pan.
Serving suggestion:
Serve as rolls with the choice of your stuffing as shown in the pictures.
