Home made namkeen - the old fashioned way - tasty & nutritious!
1cup thin poha
3/4 cup grated dry coconut (about 1 coconut)
2tbsp peanuts
2tbsp dhaniya powder
1tbsp jeera powder
2tbsp white sesame
1 tbsp black mustard seeds
15-20 curry leaves
1tsp amchoor
1/2 tsp haldi
green chillies to taste
salt to taste
1/2 tbsp powdered sugar
* Microwave the dry poha for 1 min. Mix and microwave again for 1 min.
(Else you could dry roast on a pan for 2-3 minutes, stirring constantly.)
* Take one tbsp coconut oil and roast coconut. When done, keep aside. Now roast the peanuts, green chillies, curry leaves, sesame seeds one by one in remaining coconut oil or add a little more, if needed.
* Now, roast the mustard seeds and let them splutter, then add dhaniya powder and roast slightly. Add all the roasted ingredients to this. Now add the jeera powder, salt, haldi, amchoor and mix well.
* At this stage, add the prepared poha and mix well on low flame.
* Remove from heat, and add the powdered sugar. Mix well.
This is the time to taste and see if you need to add any more salt or sugar, to bring it your personal taste!
Once the mixture cools to room temperature, store in an airtight container.
